Mini Tomato Pie

My dad and stepmom spent a few days in Lititz last week, and they brought a tomato pie back for me. This is the first time that I had the chance to try one. I've heard of tomato pies before, but I always pictured it as sort of like a square pizza with lots of tomatoes and sauce, but that's not at all what this is. It's about the size of a pot pie, and it's made up of fresh red tomatoes and herbs that are baked into a homemade pie shell and topped with a blend of cheeses. This may be one of the most delicious things I've ever eaten!
I've only been to Lititz once before and I didn't stop at the Tomato Pie Cafe when I was in town, but I'm definitely going to have to get down there sometime soon. They also serve a roasted mushroom tomato pie that I'm dying to try!
